This is the ZOTSOT checklist suggestions for Las Vegas Approach (L30) sessions. Remember that there are endless possibilities so don't restrict yourself to just the following. Always ask an instructor/mentor what they would like to see first, because they know what the student needs.

Pop up over Boulder City, under the MVA (say, 3800) and ask for an IFR clearance to KVGT (North Las Vegas).
ILS runway 12L, North Las Vegas (KVGT). Go missed and do it again!
Rocks arrival/departure at KVGT.
VOR-C, Henderson (KHND), Pilot nav. Go missed.
Right Traffic (look for the Stratosphere!) Visual approach into the 19s
Local helicopter VFR over the Vegas strip
Any approach into McCarran (KLAS). Rinse, lather, repeat.
CRESO4 into KLAS under any configuration.
ILS 21L or 21R at KLSV (rarely practiced so please use!)
Fly out of 0L7 (Jean) with IFR clearance request to KVGT in an aircraft with no GPS - /A
Show up over the west end of Lake Mead, VFR, and ask for the Cortez route into North Las Vegas (KVGT). You can find this route on the sectional charts and is a beautiful VFR Route.
Parachute operations at either KBVU or 0L7. Climb up to 13000 into the jump zones and then back down.
